These healthy, no-bake peanut butter energy balls will make the perfect snack all week long! And it is easier then it looks.
We appreciate the kind of recipe's that are both practical and really easy to manage, but are still super tasty. This is one of them. Great as an in-between snack whether you're on the go or fancy a little treat at home.
The balls are made from Nutorious honey and cinnamon PB, cacao and dates, providing the right kind of energy boost you are looking for. You can keep them ready to go in your fridge for at least a week. Or freeze them if necessary, no problem. It's our go-to recipe at the moment. No doubt you'll like it too!
All you need is...
a foodprocessor, fridge, a handful of ingredients and about 20 minutes of your free time. These are the ingredients you need for 25 balls.
- 200g Medjool Dates (pitted)
- 100g Grated Coconut
- 2 tbsp Almond Milk (unsweetened)
- 40g Cacao Powder
- 3 tbsp Honey Cinnamon Peanut Butter
- 40g Crushed Peanuts
- Exterior: Additional 40g Crushed Peanuts
Squeeze out and discard the stones of the dates and put into the foodprocessor. Add all the other ingredients and mix for about 4-5 minutes, till it becomes sticky and doughy substance. Add 1 tablespoon more almond milk if too dry. Now you are ready to roll approx. 25 balls. Put the remainder 40g of crushed peanuts on a plate to roll the finished balls into for a final touch of crunch on the outside.
Tip: grated coconut is also a great way to decorate the exterior of our energy bites. Add a pinch of salt for extra flavour.
